候油煎熟，于盒中取䭔子豏，以手于爛麵中團之，五指間各有麵透出，以篦子刮卻，便置䭔子于鐺中。候熟，以笊籬漉出，以新汲水中良久，卻投油鐺中，三五沸取出，抛臺盤上，旋轉不定，以太圓故也。其味脆美，不可名狀。
